Why can I not change my custom riding mode?

You can only change the riding mode if the eBike Flow app is connected to your eBike. Please check the connection and try again. Additionally, some of the assistance modes, e.g. Tour+ and eMTB, are generally blocked from being modified. This is also indicated on the screen in the custom riding mode settings.
